Perfect Instant Pot Hard Boiled Eggs

I have the Instant Pot Pro® 8qt pressure cooker. A pressure cooker was one of those appliances that I didn’t know I needed, but now I rely on it so often for healthy meal prep.

I prepare steel cut oatmeal, rice, wheat berries, meat, the easiest yogurt in jars, and of course, eggs!

Before the instant pot, making decent hard boiled eggs was, um… a challenge. Ask my mother-in-law… She wanted me to bring deviled eggs for Easter one year, and the peeling process was such a disaster that I brought a deviled egg salad instead.

But thankfully, this method gives consistent results. It helps even our fresh eggs from our own hens to peel easily every time! There’s no going back to the stove for me!

I prefer the timing in the recipe from Alexandra’s Kitchen. There is no extra waiting for the pressure to naturally release like in other recipes. After the eggs cook on high pressure, they can go straight into a water bath.

Tips for Making Hard Boiled Eggs In the Instant Pot

  • The water bath is an important step to stop the eggs from overcooking. Overcooked eggs have a chalky yolk that can turn green after refrigeration.
  • Don’t allow eggs to stack or touch in the Instant Pot if you’re worried about them potentially cracking (you can cook subsequent batches, if needed). I usually don’t worry if an egg happens to crack, though, so I may do 9-12 eggs at one time stacking a couple on top of the others.
  • No matter how many eggs you cook, or whether you own a 6qt or 8qt Instant Pot, the timing should be the same. You can always reduce the time by one minute if you feel like your eggs are getting overcooked.

How to Store Hard Boiled Eggs

You can store hard boiled eggs in the refrigerator in an airtight container for up to 1 week–peeled or unpeeled. Peeled eggs will store best with a damp paper towel in the bottom of the container.

How to Make Instant Pot Hard Boiled Eggs (Step-By-Step Instructions)

Step 1 – Cook the Eggs in the Instant Pot

Place the steaming rack (the metal rack that it came with) in the inner pot of your Instant Pot. Pour 2 cups of water into the bottom of the pot.

Arrange your eggs on the rack and close the lid. Make sure the valve is set to the sealing position.

Cook on high pressure for 5 minutes. It will take the pot some time to come up to pressure before the cooking time starts counting down.

Once the 5 minutes are up, vent the steam.

Step 2 – Submerge Eggs in An Ice Bath

While the pressure is venting, prepare a bowl of ice water.

When the pressure valve has dropped, open the cooker and remove the eggs with a spoon or kitchen tongs. Place them in the ice water until they are cool enough to handle (if peeling right away) or completely cool to refrigerate.

Step 3 – Peel the Hard Boiled Eggs

I like to peel all the eggs at one time for ease.

Tap them on the counter to gently crack the shell near the large end. Then begin to peel from this air pocket with the side of your thumb, trying to get under the thin membrane between the egg white and shell. Usually the peeling goes easily from that point!

Rinse the eggs to get off any residual peel, then serve or refrigerate.

Ingredients

  • 2 cups water
  • 8 eggs (or more or less--see notes)

Instructions

  1. Load pot: Place the steaming rack in the inner pot of your Instant Pot® and pour 2 cups of water into the bottom of the pot. Arrange eggs spaced evenly on the rack. Close the lid and set the valve to the sealing position.
  2. Cook: Cook on high pressure for 5 minutes. (It will take the pot some time to come up to pressure before the cooking time starts.) Once the 5 minutes are up, vent the steam.
  3. Ice bath: While steam is venting, prepare a bowl of ice water. Remove the eggs from the pot and place in the ice bath until they are cool enough to handle (if peeling right away) or completely cool if refrigerating.
  4. Peel: To peel, tap an egg on the counter to crack the surface near the fat end. Begin peeling there, using the side of your thumb to gently get under the thin membrane between the shell and the egg white. Peel the egg and rinse under cool water to remove any residual bits of shell.

Notes

Notes on yield and timing: Avoid stacking eggs or allowing them to touch in the pot to prevent cracking. I personally don't mind the risk of an egg cracking, so I will stack a couple of eggs to fit more in the pot. No matter how many eggs you are cooking, or whether you use a 6qt or 8qt Instant Pot, the cooking time will likely be the same. If eggs are overcooking (chalky yolk and green coloring), decrease time by one minute the next go around.

How to Store: Store peeled or unpeeled eggs in an airtight container in the refrigerator for up to 1 week. Peeled eggs store best on top of a damp paper towel in the container.
